    (PRESS RELEASE) Marco Polo Plaza Cebu is proud to welcome Chef Kenny Yong Tze Hin as their newly appointed Chinese Executive Chef.   


    Coming from over 20 years of experience at the helm of various Chinese restaurants in Malaysia, Australia, the Philippines and China, Chef Kenny will lead the Chinese culinary team of HAI SHIN LOU, Marco Polo’s Cantonese specialty restaurant.

    Fascinated by the delicate nuances of Cantonese cuisine, Kenny started as a budding young cook in 1992 at the Hotel Equatorial’s famous Golden Phoenix in Kuala Lumpur.  His culinary skills were honed working with the seasoned Cantonese chefs of the hotel group’s restaurants in KL and Jakarta.  From his first post as a young Executive Chinese Chef in 2002 at the Oriental Garden in Gold Coast, Australia, he has since led Chinese culinary teams in various parts of Asia. 

    Chef Kenny is no stranger to the Filipinos’ love affair with Chinese cuisine.  He was the Executive Chinese Chef at the Tea of Spring at Mactan Shangri-La and the Ching Hai restaurant of Jpark Island Resort.  Most recently, he was the Chinese Sous Chef at the Solaire Resort & Casino in Manila before joining the Marco Polo. 




    “These days, Cantonese cooking requires a fine balance between traditional cooking methods and innovative ideas and presentations,” says Chef Kenny, “but one must never lose the authenticity of taste, precise timing, and freshness of ingredients that make Cantonese one of the top cuisines in the world”

    Kenny speaks fluent Cantonese, Mandarin, and English.  He counts Fujian and Szechuan among other favorite regional cuisines, just a few of many seasonal promotions he plans for Hai Shin Lou this year.



    Looking ahead, Chef Kenny is exploring opportunities to advocate healthy eating even in the Chinese kitchen, by looking at slightly different ways to season while keeping the core essence of Cantonese flavors.

    This February and March, guests will enjoy sampling Chef Kenny’s first of a series of “Chef Recommends” menus along with Hai Shin Lou’s well-loved signature dishes.

It's not even overrated because personally, I can say I experienced the best elevated Chinese Cuisine Fine-Dinning in the heart of Cebu City - in Nustar Resort and Casino!

    THE INTERIOR

    When you set at the entrance or even in the hallway, you'll definitely flashback to your Hongkong days if you happened to travel to Hong Kong or China. Because of Mott 32 Cebu, I then learned about Joyce Wang. She's an award-winning designer who is the person behind Mott 32 interiors. The restaurant is very stunning and you won't see any missed from the ceiling down to the floor. Quoting esquire magazine, "The result is a stunning space that combines elements of a Chinese imperial palace with contemporary urban style.", that's how beautiful Mott 32 Cebu is. You can also enjoy the sea view while dining especially at dinner time as you'll witness the night sky and skyscrapers that Cebu beholds. 













    I even mentioned to our Host that time, "Mott 32 Cebu reminds me of my Hotel and Restaurants hopping in Macau - elegant and so fine!"

    THE MEAL

    Don't believe in someone who doesn't experience anything. For me, Mott 32 Cebu is not overrated. Every Chinese Dish served at our table were very good. Even when we are already full that time, the smell and fragrance of the food invited us to feast on them with open mouths. Now, let me show you some of the signature Chinese Dishes that Mott 32 Cebu can offer.

    STARTER: 


    Barbecue Pluma Iberico Pork with Yellow Mountain Honey - This dish really melts in your mouth. It's a good starter before the main dishes or you may enjoy this with Mott 32's Hanami signature cocktail. 



    Scallop, Prawn, Hot, and Sour Shanghainese Soup Dumplings - It should be enjoyed by poking a little hole in the dumpling and sipping gently the soup which has a little spice kick but is really really good. 



    Soft Quail Egg, Iberico Pork, Black Truffle Siu Mai - One of my bets on Starter. Don't finish it in one bite but slowly enjoy the flavors of Siu Mai that Mott 32 Cebu is serving.


    MAIN: 

    Apple Wood Roasted 42 Days Peking Duck "Signature Mott 32 Cut" - The Star of the meal is the famous Peking Duck. Imagine the flavor of the duck aged for 42 days and prepared in a special oven, giving the cooked duck glistening skin and soft meat, paired with their special sauce made of secret ingredients. HEAVEN!




    This roasted Peking Duck is best served or enjoyed in two ways. First, simply pour a little sauce, and a little brown sugar into the meat and hit them directly to your taste buds. Second, wrap the meat or skin with veggies, brown sugar, and a special sauce. Eat it with your bare hands! Don't worry, as a world-class restaurant, the assigned waiter/waitress will give you a wet tissue/towel to use before and after enjoying the duck.






    Signature Lobster "Ma Po Tofu". Another favorite! If you try to find photos of this dish online, you may wonder, "where's the lobster?" As considerate as Mott 32 Cebu, they prepared the Dish well that day so that it will be less hassle for us customers to enjoy the meal.

    THE DRINKS and COCKTAILS

    One insider mentioned that all restaurants inside Nustar Resort serve good cocktails but Mott 32 Cebu is one of a kind. So, as a drinker myself, I want to try it by myself and promise, they never fail! Even my Blogger Friends, Neil Savellon (chefbuano.com) and Sinjin Pineda (LetsGSinjin.com) agreed about it! Now, following NO ORDER, here are my top list of Signature Cocktails in Mott 32 Cebu!



    Jade Road - Don Papa Rum, Pandan, Pineapple, Lemon, Celery Bitters





    Forbidden Rose - Vanilla-infused Pisco, Passion Fruit, Lychee, Chili, Lemon



    Nashi - Pear Brandy, Sake, Vodka, Thai Basil, Lemon



    Hanami - Rye Whisky, Gin, Umeshu, Yuzu, Shiso, Ginger Beer, Chrysanthemum

    THE VERDICT

    I say this once again, everything is good! World-class Chinese Restaurant in a world-class Hotel, Nustar Resort, and Casino. I think Mott 32 Cebu has definitely found its home here in Cebu. In regards to food, when I visited and traveled to Hong Kong and Macau, my friends knew the "taste trauma" I had when we ordered a pecking duck soup somewhere on HK Street. I did not even finish that dish but here in Mott 32 Cebu, I think I was the one who swept the roasted pecking duck from our plates. 



    In general, this is by far, the BEST Chinese fine-dining experience I ever had in my life.

    Ching Hai is Making Waves in Cebu

    On August 15, 2022, Jpark Island Resort and Waterpark Mactan Cebu’s opened the doors of its Chinese restaurant, Ching Hai. Its name literally translates to “Blue Ocean”, and was aptly chosen as the restaurant is located within the water park. “Ching” which means blue, represents the wood element in Chinese culture, depicting growth and optimism. “Hai” means ocean, its vastness, and endless possibility of teasing your palates from mild and fresh to well-seasoned and robust taste to bring out the natural flavors of the dish.

    Ching Hai is open to serving classic Cantonese cuisine for lunch and dinner and seats up to 100 guests. It houses eight private rooms for exclusive family or corporate gatherings and intimate booths for small groups. Guests are welcomed with a fresh, warm cup of traditional loose-leaf jasmine tea the moment they sit down in the restaurant. Ching Hai is open daily, except Thursdays. They are open for lunch from 12:00 nn to 2:30 pm, and dinner from 6:00 pm to 10:00 pm. 

    Ching Hai is one of the 10 restaurants under the helm of the resort’s new Vice President for Operations and General Manager, Brian Connelly. He has 40 years of restaurant experience across prominent properties in the Asia Pacific, the Middle East, and the United States, which makes him the perfect role to lead the country’s 5-star family water park resort.

    Jpark Island Resort names Brian Connelly as the resort’s new VICE PRESIDENT - OPERATIONS AND GENERAL MANAGER

    Brian brings with him a wealth of experience in various leadership roles spanning almost 40 years with prominent hotels and resorts in Asia Pacific, Middle East and the United States, making him the ideal successor for the Philippine's only premier 5-star family water park resort.

    He will be responsible for Jpark Island Resort and Waterpark Mactan as well as oversee the construction and opening of Jpark Island Resort and Waterpark Panglao, in Bohol.
    A Bachelor of Science graduate in Hotel and Restaurant Administration from Oklahoma State University, he most recently held the position of General Manager for Marco Polo Plaza Hotel in Cebu City. Earlier in his career, he held senior management roles around the globe with Hilton Asia Pacific and Middle East, Oakwood Asia Pacific, Fairmont Hotels Middle East and Intercontinental Hotels in Thailand and China respectively.
